Varieties of nutrient-rich winter squash include butternut, acorn, hubbard, and turban. These tasty gourds are high in vitamins A and C, potassium, folate, and fiber. The phytochemicals found in winter squash, beta carotene and zeaxanthin, have been shown to help fight cancer and prevent macular degeneration. Eat them roasted or mashed, add them to soup, or try our Butternut Squash and Kale Bread Pudding for an antioxidant-filled fall dish.
