Varieties of nutrient-rich winter squash include butternut, acorn, hubbard, and turban. These tasty gourds are high in vitamins A and C, potassium, folate, and fiber. The phytochemicals found in winter squash, beta carotene and zeaxanthin, have been shown to help fight cancer and prevent macular degeneration.
